Often times I’ll make food, and bring some over to my parent’s house. I’d say 85% of those times the food has meat in it. That being said, my Mom doesn’t eat meat (other than seafood). SO, 85% of the time I bring food over, she doesn’t get any. Which leads to messages like the following. (LoL) Some times I feel bad, But I’ve told her, if she wants me to cook her food, she’s going to have to either buy me seafood to make her, or give me money for it! Otherwise, if I don’t have any in the fridge, she’s not getting any! (LoL) So yesterday, I got off of work, and got to cookin’. Although she doesn’t like Tilapia anymore, beggars can’t be choosy, and I never reveal what kind of fish it is, (other than its “delicious” “baked”, “fried”, “seared”, etc.)
NOW to the food!
I started off by making a finely sliced slaw of sorts, I knew the rest of the ingredients are a little heavy, so I wanted to lighten it up a bit, and add a little bit of acidity. This is actually composed of Lettuce, Cilantro, Onions, and a really light toned down sort of Cesar dressing.
After the slaw, came the rice. I honestly couldn’t tell you exactly what I put in the rice, When I’m in the zone, I usually just start grabbing random ingredients and balance out flavors. (LoL) I will however say, that the rice came out really good!
Next, I battered up the Tilapia! Dredged it in flour, egg, and panko. Shook off the excess and dropped it into the fryer. It came out with a nice crispy outside, soft and flaky inside. PERFECT!
Now the easy part.. Putting it all together. Mind you, yesterday I was fasting.. Only liquids for me! Having to stand there, and cook, while the savory aromas manifested and filled my kitchen without trying to pick at the food was extremely difficult!
And there you have it, Tilapia Katsu Wrap/Burrito.
As previously mentioned, for now, I’m just going to be posting the food I make which I feel are worthy. (LoL) Later on down the line, I’ll start writing recipes and reviews..
